Additional fields can be added at a later date, however, this puts us in
a situation of hoping the participants will add the info, whereas, if we
nail it from the start, participants are forced to enter the data during
the registration process.

For building communities of interest in the field of CI, those defined "interest container" container may be more helpful than the freeform that inspire to share many  foci unrelated to lour  work together thus make group formation  more difficult, particularly  when the total population is relatively small... Social networking practices may not work that well in professional networking context... That's why I think that your original instinct was right.

No what needs to be decided is if this is freeform (the user describe what their interests are) or structured (how i currently have it setup) From the phone call it seems that we want to go with the free form.

Looking through user lists or indices

This may not be such a good idea because contacting one through the webform has much more limited functionality than Skype or Gizmo. I would suggets to give  clear instruction re when and how to access/use the web form and leave in the skype/gizmo name in the profile, as well.
